I was really looking forward to receving this book. I've done a little bit of home smoking before with three pages of instructions from a preserving book and an old filing cabinet, with some success. I wanted to improve my methods and expand the range of things that I smoke. The range of hot smoking is pretty comprehensive, but lacks depth. There are a few points where the American bias comes in (bear and moose seldom appear on our home's game menu), but the recipes can be adapted to European game. The parts describing smoking of oddities such as nuts, cheese and eggs are useful. The title tells it all. There are gas grills, but not any gas BBQ's. Good cookbook, but not really helpful to the experienced BBQ'er. More for an amature that feels that a gas grill is all you need to do food right. There are lots of better books on the art of BBQ'n than this. If you know that the difference between a grill and a BBQ, search for better books. If you don't, this book will give you what you need to cook food with a gas grill. My question is, why do you need to cook food on gas outside, when you can do the same inside on a gas stove.

In a recent article in Business Week, The Thrill of the Grill was referred to as the bible for those who enjoy backyard cooking. After reading it I was very disappointed with it's contents. If you are looking for simplicity in cooking don't bother with this book. The recipes use exotic ingrediantes and take considerable time to prepare. The cooking istructions are also confusing and unclear. For example, instructions for cooking Grilled Rum-Soaked Shrimp With Mango-Lime Relish starts with peeling the shrimp and making a 1/4 inch- deep incision on the top of each shrimp... Instruction #4 calls for placing the shrimp on the grill for 3 to 4 minutes on each side, until the shells turn bright red. I admit my cooking education is limited, but ... Read More:

My husband and I have used this book several times for BBQs at our house. We bought it simply becuse we wanted to have one book that covered ideas on BBQs(having got tired of hunting through all the other books for BBQ or possible BBQ recipes). I must say that so far most of the recipes I have tried out have got rave reviews. More importantly nothing has turned out horrible or nasty tasting, everything was good. We especially like the Pork Calypso and the Indian spice rub with fish. The pineapple and mango salsa is also fantastic. For the section on marinades and rubs and glazes and the the salsas and sauces, alone I would say the book is worthwhile.
