To understand why the River Cafe books are as they are, one must first understand Italian cooking. It has more of a regional basis than any other european country, although France comes close. They use the best of the local produce. What Ruth and Rosie provide are regional receipes that are authentic, although somewhat restaurant-ised. If a dish requires Chianti, then it will be Tuscan in origin, if it require Barolo then it will be Piedmontese. To be critical of this, is to fail to understand Italian cooking. I had a difficult time finding this book - so hats off to Amazon (once again). When I watched 'Goodfellas', I was just as taken by the food as by the plot - right down to the final scenes where HH is frantically preparing his family a meal, while being followed around by the police, in a completely paranoid state. I was really glad when HH came out of hiding (he's still in a witness protection programme) to write this book. Many of the recipes in here are painstakingly detailed - I spent a whole afternoon preparing meatballs in tomato sauce. Worth every second though. I was advised to read this by a chef, best piece of advice I have had for ages. If there was a book like this for each area of interest, you wouldn't need many books!
