C J J Berry was a master on winemaking. I have bought and read most books on winemaking. This is the one I always turn back to. If you have to buy one book on homewinemaking this is the one! He begins my explaining the concepts and techniques of winemaking in easy to understand terms. He also explains the science behind the process but he is never confusing or condescending. I have never come across a problems which has not been solved by his troubleshooting section and his procedures are comprehensive but easy to follow. The remainder of the book takes you through a wine making year with suggestions, recipies and leaves you confident enough to experiment successfully. The ever increasing size of this book reflects the increasing interest in wine, so it now lands with an impressive thump on your desktop. Though its content doesn't always reflect who that new market is.

The authors start with a, rather meandering, description of the history and production of wine and some basic notes on tasting, appreciation and handling of wine. Some of this is very useful, most of it is very basic for someone who already knows the subject and all of it could do with some editing to make the best of their material. Johnson clearly knows his stuff and he covers the world of wine pretty well given that this is a pocket-sized edition.

The book was too compact for me though and I think it suffers from too many abbreviations and too many bullet-point entries. I accept that your expectations shouldn't be too high if you are buying a compendium, as compromises do need to be made. For me, however, it was slightly difficult to find my way around and get the best out of what the book has to offer.

It must also be said that the editing and proof-reading were well below expectations and, indeed, very disappointing.

That said, you will still come away a lot wiser with this book so one important purpose is served.

If you have enjoyed the delights of CJJ Berry's 'First Steps in Winemaking', then this is an ideal companion and the logical next step. Although one or two of the recipes have been repeated from the first book, this contains over 130 mouth-watering recipes for home-made 'country' wines. Even at today's prices, they can work out as little as 20p per 75 cl bottle!!

Unlike the first book, the wines are listed in alphabetical order rather than seasonally which makes them easier to locate. The only problem I found was deciding which to make first and having to limit production to the space available in the house.

Great wine guide. It's very similar to Hugh Johnson's pocket guide but with much greater detail.

Talking of Hugh Johnson, this guide suffers from the demon proof-reader too - perhaps they've all been sampling too much vino! Unless you've got a fantastic memory, Hugh Johnson's guide is probably more useful as it can easily be carried around on wine buying trips, Wine Behind TL is really too bulky for that.

Wouldn't be without it though. It's encyclopedic knowledge will help you track down the wines that you want.

The high quality patisseries of Paris are an extraordinary visual treat and their patisserie would be a deadly addiction were it not so rich (and expensive). Unless you employ help in the kitchen, this book should be viewed as a tour of the top Paris cake shops rather than a recipe book . In trying to recreate the gateaux in this book you might lose the will to live. Home bakery is for me half the fun of creation and half the fun seeing it disappear but this book is about art.
I've also long held the suspicion that some of the awe inspiring creations are given stability and attenuation of taste by the inclusion of tallow, just as they use lard in their best croissants I think certain all butter patisserie could collapse under its own weight or leave you with heartburn. ...
