I bought this book purely on the strengths of Julia's previous publications, but unfortunately it was most disappointing. Readers familiar with her books will find that the content lacks both substance and quality. It's uninspiring and the layout/presentation is in desperate need of an overhaul. One would have thought that a book bearing this title would cover all the basic recipes and techniques-not so it seems. In short, I would strongly recommend all amateur cooks and gourmet fanatics to stick to her other titles.

On the cover of this hardcover classic is the following statement: "The only cookbook that explains how to create authentic French dishes in American kitchens with American foods". I think this was key to the success of this cookbook; you could use what you could find and not have to scour the earth for the right ingredients.

I was looking at the copyright on the book. My mother gave me hers about two decades ago; but the original date on her edition was October 16, 1961 (amazing) and this book is every bit as useful for me today as it was for my mother.

I found this book rather bizarre. It features recipes for fried eggs (ingredients eggs and oil), rice (ingredients rice and water), mashed potatoes etc... Apparently in Thailand children eat rice for breakfast, lunch and tea and in Ireland they eat plates of potatoes - just potatoes. Considering all the hundreds of possible recipes which come from these countries the author has summed up their cuisine a little too simply and done a great disservice to both the countries and to anyone who buys this book and thinks that is really all that is eaten. It made me question the rest of the information in the book which may have been correct. It does contain some nice little recipes but take the generalisations with a pinch of salt.
