I bought the authors' newer work, The Flavor Bible: The Essential Guide to Culinary Creativity, Based on the Wisdom of America's Most Imaginative Chefs, which describes itself as covering "modern" flavour combinations, whereas this earlier work covers "classic" flavour combinations. It also says in that other book that it ought to be used in conjunction with this earlier work (and also with their work on food and drink matching, What to Drink with What You Eat: The Definitive Guide to Pairing Food with Wine, Beer, Spirits, Coffee, Tea - Even Water).

So, I duly went ahead and got this book too. However, I honestly cannot see anything in this earlier book which warrants getting it if you have the later work, as the later work appears ... Read More:

This book is absolutely FANTASTIC! The recipes, mostly from West Africa, range from very simple side dishes, that you could add to more familar fare, to complex fish, vegetable and meat dishes. All are clearly described and well illustrated (i'm no great chef but like to experiment in the kitchen and, having received this book just 2 weeks ago have already tried 6 or 7 of the recipes. All of them have turned out successfully - as far as I can judge - and all of them I will definately make again). There's also a nice section at the beginning explaining what some of the more unfamiliar basic ingredients you'll need to find are. hello,
im a total portuguese nut - love the place. been going back and fore there now for quite soem time. have always tried to get recipes etc for their magnificent food, but always failed
upon aquiring this book, i wasnt expecting anything special - how wrong was i? this is the most informative cookbook i have ever read. and the recipes are superb

Every aspect of the fascinating and varied Italian life he encountered is amusingly reflected upon in his lightly erudite prose. After my disastrous attempt with Paul Prudhomme's book, this book was a breath of fresh air. Tasty, simple recipes which remind me of the Carribean. Not all are perfect, but a very good success rate with me, particularly with fish & prawn recipes.
