This book changed my life!! OK, slight exaggeration but it did wonders for my cooking confidence, which means i cook a lot more now, and that can't be a bad thing. First of all the recipes are very varied & delicious. Also importantly (for me at least..!), all the 'work' is in the prep, which of course you can take all the time you like over (though it needn't take long). The actual cooking tends to be pretty quick and easy stir frying, so no panicking during cooking. The ingredients needed are pretty easy to come by (fresh vegetables; chillies, lemongrass; soy & fish sauce; soba noodles; dashi etc.). The final reason i love these recipes is that you feel really good for having had such a healthy meal, without it tasting 'too healthy'..!

I had read a lot about El Bulli and Ferran Adria in newspapers and magazines, but his restaurant always seemed remote and mysterious. This book goes into great detail to show how "the world's number one restaurant" actually works, from 6am when the sun comes up to 2am when the customers have left and the door is locked. It's fascinating (and a little frightening) to see the lengths that Adria and his team go to in order to ensure that every guest has the best experience. There are some recipes, but you'd need a candyfloss machine and various other arcane bits of kit to make them all. Its a reliable indication a cookbooks value and usefulness if its encrusted with splashes and looks as if it has been marinated in soy sauce. My copy of China Modern is rapidly approaching health hazard status. Its up there with my (rather older) Ken Hom's Chinese Cookery and that's praise indeed. If you only bought one chinese cookery book this would be a good one to pick. Indeed the kung pao chicken recipe alone more than repays the cost. My partner now claims this as his signature dish and is only too happy to rush to the kitchen to prepare it. Ching-he's food stands out because it tends to be punchier and more flavoursome than many a standard chinese recipe. After years of struggling for hours, stirring and stewing leaden dishes with heavy spices, it has been the most enormous relief to find this wonderful book. We ate at Benares and I bought the book as soon as I knew it existed. Since then I have cooked most of the recipes in it. They are short, clear and uncomplicated. I usually have most of the ingredients in the house or in the immediate vicinity of where I live, which makes the recipes ideal. I have fed happy vegetarians and vegans as well as the usual carnivores. I particularly like the ease with which you can produce five or six different dishes so that people can help themselves to an array of flavours, and all without it being hard labour. I already had several of Delia's books, and I didn't really think I needed another. I received this book as a gift at christmas, and like many of the other reviewers have already said, it really is fantastic.
Her recipes are as always easy and simple to follow, written in such a way that inspires, even the most novice of cooks.

This book gives an excellent insight into the work and philosophy of a first rate chef. Most of the recipes are quite sophisticated, and the book is probably not one for a novice or nervous cook. The photographs are beautiful, and give splendid ideas for presentation. As a vegetarian, I was particularly interested in the puddings, which use pectin as a setting agent, rather than gelatine. Interesting and useful too are the 'mini recipes' - the bits between the main productions with instructions and techniques on making and using such things as powders, oils and stocks.

Wow! What an amazing book! I had my first Wagamana experience on Saturday when I was in Birmigham as we don't have any in Cornwall. The restaurant has been on my "places I must eat in" list and after such wonderful food and service, I just had to buy the cookbook!

Well, it arrived yesterday and I made the Spicy Beef Noodles for Dinner and then made a noodle salad for my packed lunch for work! Roll on lunch time!

It is an amazing book with lots of information and pictures. The recipes are easy to follow and the food that you create is authentic! Some ingredients you do have to look for, but it is worth it! Especaially if you are a foodie and appreciate cooking!

This book would be good for newbies to noodles (like me)!

This must be for people who have already eaten at Moro or in Andalusia - despite being a good cook I cannot make these recipes taste good. There are far better (but less trendy) Spanish/Moroccan books by any of the following food writers (as opposed to chefs-of-the-moment): Elizabeth Luard, Penelope Casas, Paula Wolfert; all keepers, unlike this one! In its favour, the reference section is reasonably helpful & the pics are intermittently charming. The paper stock stains & dissolves very easily - not great for a bone fide cook book, eh?
