If you only ever buy one knife it should be this one. My mum bought this for me as a house warming present. In my opinion Global produce the sharpest most well balanced knives - ever!

You barely have to put pressure on the handle to cut through potatoes, carrots, or any other root veggie. I have used it to cut through a frozen shoulder of pork that wouldn't fit in my largest tupperware and it was as easy as slicing through a parsnip. I do have to warn you though - They are far sharper than your average knife and should be used with respect at all times.

It stays sharp for ages and is really easy to sharpen with a Shinkansen Ceramic Sharpener.

Bought this knive some time ago as part of a set to work with. Took a bit of time to adjust to the form, but this knive has stood the test of time - 6 years heavy use and still going strong. I have tried many knives and this one remains my firm favourite

I bought this knife to add to my 5 knife set. It's great, and sees much more use than the GS-38 paring knife now. As the description indicates, it's perfect for peeling, and keeps it's edge far longer than any other non 'Global' knives i've owned.

I have had Global knifes for a long time and I have this set and have used it daily for the last 18 months. They are truly excellent and a pleasure to use. There are two serious downsides. Firstly, you will like them so much that you probably buy more so the expense is even greater than it first appears. Secondly, they are not dishwasher safe. Most high end knife manufacturers object to the chemicals in dishwashers because they attack the molecules at the very sharp edge and slightly dull the blade. With Global knives, when your housekeeper repeatedly places them in the dishwasher, the black spots on the handle disappear spoiling the design. I think Global should fix this issue.

These are fairly great knives; however, I have now had three, and sadly now have none. Each has suffered the same fate; after two or three years the join between the handle and the blade becomes brittle and then just snaps. I believe that I may be at fault as on occaision the knife has ended up in the dishwasher (something that I recall that you are not supposed to do). What appears to happen is that the joint corrodes (I assume from the dishwasher powder) and this is what causes the brittleness. If you are prepared to hand wash and dry your knives each time you use them then fine, in a busy family kitchen this is a bit of a luxury and if something cannot be bunged in the dishwasher then it's not really very efficient.

I have about 20 Global knives, all excellent, but this knife is the one that I use the most. It is a convenient size for most jobs and I like the balance of the knife in the hand. After use, I always clean the knife immediately and use the ceramic steel to maintain a keen edge. All the knives are stored in a wooden block, so that they are immediately available and sharp. If you can't afford a lot of knives, but want a really good, practical workhorse, then this must come high on the list.

I first saw these knives at the Good Food Show in Birmingham about 15 years ago. I couldn't afford them then. A few years ago I bought one and have slowly added to my collection. Having used many knives (for cooking purposes only!!), I can honestly say that these are, without doubt, the finest knives I have ever come across. The weight, balance and cutting edge make it an absolute pleasure to use them. I have also invested in the Shinkasen water sharpener. I know they are expensive but if you consider them as a lifelong investment they will be money well spent. Fantastic.
