Well made lump of cookware. Good heat spread and reasonable non-stick even after 12 months use. (FAR BETTER than the Meyer 'Select' Stainless Steel non-stick surface which is poor in the two pans I have.) But non-stick does not seem to be as tough as my 10 year old Tefal and shows scratch marks even though ONLY plastic and silicon utensils have been used on it. Summary: Good and tough. Good handle. Downside is weight. Not for the weak-wristed so forget tossing pancakes. Value for money?.... not sure.

Bring the pan to a high temperature until the fat starts to smoke, then turn off the heat and leave the pan to cool naturally. Then use a paper towel to wipe away excess fat, and the same towel to wipe the outside of the pan too, thus spreading a thin layer of fat to protect the outside.
